Salt, pepper, flour and fry, eaten out of the pan or on bread as a sandwich.  When I have excess, I love the mushrooms sauteed with ham and put in a ham, mushroom cheese omelet, heavy on the mushrooms.

Dried to a spongy consistency, I actually think they're pretty palatable straight up.  Like a rice cake with a kind of an earthy dirt flavor.  Dipped in chocolate, I think they're pretty good.  Reminds me of chocolate crickets.

I like to make different kinds of ramen, szechuan, and gochujang dishes with my fungi. The flavors and textures make them a lot of fun to eat.

There's a solid miso ramen recipe in my rotation that I recommend if you dudes want to try it out. It does involve two or three ingredients that would need to be picked up at an Asian grocery store or ordered online; those are super cheap, though, and can easily be transitioned into some other fun dishes. It's definitely not a low-calorie food, in case that matters.

Sometimes I try to grow H. americanum in high CO2 so it has a really skinny but voluminous, root/tree-like morph. When you put it into soups, it sort of acts like a noodle and a vegetable/extra. Here's a close up shot of the structure I try to shoot for. Sometimes I end up getting the normal morph, but at the end of the day it's still tasty Hericium so there's nothing to really complain about.

I like sauté oyster mushrooms, green pepper, and onion, served on top of steak. super good.

dried oyster & dried shiitake work really well in chili soups as well, just crush a few up. really brings a good flavor to the chili. portabella is also really good in chili's as well.

Thick, creamy soups all the way.
Or soups with lotsa greens if I want something less heavy.
Jury's still out on how I feel about meat + mushrooms; A lot of the time it feels like the flavours aren't as complimentary as I'd like, veal aside.

I like them so many ways but if I had to give a favorite. Absolute favorite preparation. It would be.



Deep fried oysters. I like to use shore lunch as the breading personally. this shit is worth it.

First post,gonna share a recipe

Mushroom and gorgonzola sauce

Ingredients :
A large panful of mushrooms(any kind will do,altough i don`t really care for oyster mushrooms in this recipe,favourites would be blueing boletes)
2-4 spring onions.
0,5 L cooking cream
200-300 g of gorgonzola
50g butter
some oil
some milk
1 or 2 cloves ofgarlic,black pepper,white pepper,nutmeg

Start by cleaning the mushrooms and cutting them into medium sized bits.Then proceed to the spring onions,we`re gonna use the white and some of the light green part for the actual sauce-so aim for a thin cut.Keep the rest as garnish,or for later use.Melt the butter in a pan and add som oil to it so it doesnt burn so quickly,when it melts add the onions,let them simmer on medium heat for 2-3 mins.Then add in the mushrooms up to 1/3 of a pan sprinkle with salt and pepper,mix them thouroughly,then fill up the pan again up to 2/3 sprinkle with S&P again,stir for a minute or two and put on the lid.(If you have any mushrooms left you have to wait until the mushrooms in the pan let out a bit of water and shrink,otherwise it just gets messy,some mushrooms might scorch a bit at the bottom)Cook on med-high heat with the lid on for 8-10 minutes,stirring every 1-2.Remove the lid,have a taste add salt and white pepper accordingly.then cook on high heat while stirring constantly for around 5 minutes to let some of the water boil off. If you keep all of the milk based ingredients at room temp its gonna make all of the next steps a bit quickerAdd 2 thirds of the cream,bring back to a boil,remove the casing layer of the gorgonzola,and start adding it to the mix...I just crumble it between my fingers to smaller pieces above the pan...melt the cheese,add the rest of the cream,keep it boiling on high,add salt,white pepper,powdered nutmeg(1-2 tips of a teaspon)when the sauce thickens up a bit,go for the final taste test,add the garlic and a bit more of any spice if necesassary,and you`re ready to serve with your pasta :smile:.

The milk in the recipe is for when you need to thin up the sauce at any point during the cooking process or if you feel you`ve boiled off all of the water before properly cooking the mushrooms.

I hope that if anyone tries it,they`lle enjoy it .

Thank you Bod!  I didn’t have shorelunch but I had Andy’s and Fish Crisp.  Andy’s was too strong and you couldn’t taste the mushroom but fish crisp is similar to Shorelunch and it was amazing!

Very timely post as I am overrun with oysters right now.
