How long do sterilized jars remain sterile?
    #2595111 - 04/23/04 03:55 PM (16 years, 10 months ago)

If I were hypothetically to boil my jars with verm. and RBF in them, how long do I have until innoculation would be pointless? Would taping the jars shut help them last longer?

If they are taped shut, sealed tight and pressure cooked, id say theoretically theyd stay sterile nearly forever....

Although the "freshness" would degrade, and I think losing freshness would be your bigger concern...

essentially they are canned, just like if you canned sauce or pickles or whatever.as long as its a good seal and the steralization was done correctly, they should last for years.I make Grain bags ahead of time, about 15 at a time. Then i seal each one in its own outer bag with a vacuem sealer, and they stay fresh as can be and for a long time..But a jar should be the same way, thats why people do it with food,to preserve it.

Butternut squash are softer than acorn or other types of squash, which makes them easier to cut and prepare.

Technically it should stay good for a couple of years. However, I wouldn't inoc year old jars, kinda risking contams.

siqno not to poke at your idea, but what is the difference in innoculating a *sterile* 1 year old jar, vs a sterile 1 day old jar, : answer : NONE. if both are sterile, the only risk of contamns is through aseptic technique not being properly practiced. having said that, i think we should clarify that the intended thought is that the longer one LEAVES a sterile jar un-innoculated, the greater the probability that it will end up getting contaminated prior to being innoculated.

peace
