What causes the mushroom smell?

Was curious, is that earthy smell due to nutrients? Byproducts of respiration? Tried doing some research but didn't get very far.

Thats just how mycelium smell. Even on agar, they smell like mushrooms.

yeah thats kinda like asking what makes wood smell like wood or a flower smell like a flower.
i imagine the only reason it smells like anything is because we have noses that can interpret smell particles as sensory data :P

I'm afraid you came to the wrong online community to ask that question. Everything smells like everything smells because..... I don't think anyone hear could answer that question any better than boiling it down to exactly what ingredient in what thing you are smelling. Mushrooms smell like mycelium because that's what they are made out of. Why does mycelium smell like mycelium.... UHHH :shrug:

I know that cubensis gets its nasty smell from a waxy compound, I have been able to successfully remove it from the mushrooms using 100% ethanol, but I have not done further testing on this substance at this time.

Cubes smell and taste like their favorite substrate, shit has never smelled good to me, but to each their own, my Son thinks that the landfill smells good.

I like the smell of cubes too, I like popping a sub out of the shoe box right before harvest and the fresh mushroom smell gets me every time. Cooking them, making tea, just about makes me want to throw up every time, not exactly sure why but its something about that smell of boiling water and mushrooms.

There's a plethora of aldehydes and ketones in mushrooms and pretty much anything with scent. In fact some mushrooms make the same scent molecules as other foods for instance there's fungi that have scents/tastes such as anise, almond, and even raspberry.

Well yeah that's more or less what I'm asking for. Lots of geniuses itt replying "MUSHROOMS SMELL LIKE MUSHROOMS BECAUSE MUSHROOMS SMELL LIKE MUSHROOMS HURR" when I'm asking for specifics, I'm having a difficult time narrowing it down past general aromatic compounds. I guess I should try posting this again in the advanced mycology section.

Honestly mycelium doesn't have any distinct smells compared to a fruit, they smell the same since a fruit is only compacted myc

I have the book called fungal pharmacy

In it Robert Rogers describes the uses of diff fungal essences. So they extract the volatiles if the mushroom into a mushroom essential oil.

Anything that smells and has a taste contains terpenoids if I’m not mistaken. Among other volitile constituents I would imagine I’m no expert. If you smell it, the smell is caused by volatile organic compounds evaporating into the air.

Terpenoids are very volatile meaning the require low temps to begin to enter a gaseous state in which case they evaporate into the air and our nose can detect different types of volatiles at diff ppm levels

So when naptha for example has reached its odor threshold is when you can begin to smell it in the air. Naptha has an odor threshold of .86ppm/m3

Terpenes and terpenoids are diff terpenes are made by plants and some insects

You obviously have not smelled many cubensis grows because there is a definite difference in the scent of fruit bodies and the scent of the mycelium. Cubensis mycelium smells exactly like store bought mushrooms and the fruit bodies have a farinaceous smell (like shit).

Edit: as far as the actual name of the compound that causes the smell in cubensis fruit bodies,  it may not have a name, yet. No one has been able to do any real research on them ever since they were outlawed in most countries back in the 1970's.

Farinaceous means smelling like grain or starch. If your cubensis smell like shit there is something wrong lol.

I believe (not certain) that a key source for mushroom smell is ergothioneine, an amino acid produced by many fungi and some bacteria species. Many animals incorporate it in specialized tissues, but it’s roles are poorly known to unknown, other than being an anti-oxidant. There could easily be more than just this one source, but it is a goid place to start.
