My beautiful little fruits <3.

I feel like this is kindof a good problem to have, but I'm getting fruiting before the cakes are fully colonized. I've done my fair share of research on this topic, but the advice seems case-by-case. Should I:
1. Let these fruits mature, then birth and harvest the cake removing any section of the cake not fully colonized 2. Wait, and hope that the fruit doesn't rot before the cake fully colonizes
First time grower, and I suspect we didn't control the temperature during the colonization phase sufficiently.
Thanks for any advice in advance!

I'm a big advocate for feeding healthy pins (yours definitely qualify) fae and water and have had good results doing this. Not all pins will be perfect and its important to remove rotting ones if you see them heading that way. I know you risk contam because it's not fully colonized, but obviously this isnt a perfect jar anyways. I'd rather see what magic those pins produce personally but maybe that's just me. You could also let them grow in there while it continues to colonize but you risk that the jar doesnt really ever fully make it and those pins are smaller and less grown bc no fae and water. Hopefully that all makes sense.
Everyone is at a different stage. For me, a single cake isnt ever a noteworthy loss (like it used to feel like for sure) so I like to experiment and risk more with more reward

Wrap the jar in black plastic so it doesn't get any light from the sides. I find when the jars are exposed on the sides I get way more side pins than top.
Also keeping them warmest now is a good idea, colder temps can induce pinheads.
I'd only pulling them out once the top's colonised

Well that's unusual. Not sure what to do in this case

What a difference a few days make.

4 / 8 jars have started growing fruit. 2 jars are just beginning to show signs of colonization. 2 jars look clean uncontaminated, but not showing any sign of colonization.
I'm super excited about these mushrooms, and I think I'm gonna leave them in for a few more days to hope that the colonization firms up a little more. I'll harvest the fruit, cut away the uncolonized sections, dunk them and then I was planning to go standard pf tek and put them in a fruiting chamber. Reading up on fae tek now though.
I was considering using 2 of the cakes in a shoebox tek since they aren't going to be perfect cakes no matter what.
Any advice would be appreciated.

I think your last idea is best. Mix them with some substrate (like coir properly pasteurized) and spawn in a shoebox.
Plan B: birth them, pull off the premature stemmy mushrooms, dunk and roll.
Either way could work out.
I don't think anything good will come of leaving them in the jars at this point.

Well here's an update.
Today I birthed them, and well, they had become quite impressive.

Got about 40g wet weight (they did not want to come out of the jars, and I ended up bruising these up pretty badly ).

They are soaking now. I'm doing 2 jars to a shoebox, and 2 jars in a standard pftek style fruiting box.
Let me know what you think!
I couldn't help but share my progress.

Typically you want 3-4 cakes for a shoebox. I would use my best cakes, whichever colonized normally and not super early pins, and put those into shoebox.
Any that pinned early like the picture probably are bacterial and causing those super early pins. Since it's only 1 or 2 cakes like that, I wouldn't make a chamber for so few cakes(they like company), I would just top fruit them in their jars like this. https://www.shroomery.org/forums/showflat.php?Cat=0&Number=24981864&page=0&vc=1#24981864
If you really want to go the extra mile: you can grate, mix with some coir, then put back into the jar with a lil top layer. Just do that last so you don't cross contaminate the good cakes.

Pinning before full colonization could be a sign of a contaminant being present in the jar. You may want to isolate that cake if you still plan on using it for anything
