How to store fruits for dehydration?

Been harvesting my first flushes the past day or two putting them on double thick paper towels covering them with the same and stacking them up in the bottom of my fridge until i get a dehydrator tomorrow (3-4 days max in fridge). Anyone see a problem here or is that ok? I didnt know if i should start air drying them anyway im probably over complicating but just to be sure.
Probably a couple ounces wet all in paper towels coolin in the fridge. I tried to make sure none are touching idk where i read that but it seems legit.

dont put fresh shrooms in the freezer. fridge is fine for a few days.

Tbh I've always thought it destroys the cell structure and turns them to goop once you thaw them.
I froze shrooms once and they turned black

Personally, I’d opt for laying them out in front of a fan until you get the dehydrator. Cool moving air isn’t as good as warm moving air, but it’s better than being wadded up in a paper bag.

Yeah youre good. Had a friend hand me some fresh shrooms they stored in a fridge for a week or two so I can dry them and they turned out fine.
You could just put a fan on them but depending on where you are it may never get dry enough by then. Always put in dehydrator if youre not going to eat or process them for a while.

I can only speak for porcini, they will be fine in a fridge for a few days.

When I tried it the immature caps seemed to remain intact after thawing. I guess because they're meant to be able to expand quickly.

It depends on the water content. If the water content of the shroom is lower than usual, say with larger fruits, it should freeze nicely.
