if I was getting fresh eggs no. grocery store eggs yes. Are European eggs as clean as Americans? I think ours are held to a pretty high standard but not as good as say japanese eggs for average quality. Granted we need to produce alot more eggs for cheaper.

im not sure why but that's what I was told on how to watch tv by grandparents as kid it sounds completely different to whats really being said n then keep ur eyes open then tell me what will happen next

oh please that was maybe true 25 years ago. Go to some dairy farms talk to cheese makers. Eat their hella funky small batch unpasteurized craft cheese. I'm convinced Europeans must gave never tried actually good american cheeses and dont export any of the shit they claim is the best in the world. but wtf do I know.

People who come to my apartment often comment on the fact that I don't keep my eggs in the fridge.

Never done it in any other country I've lived in, but it seems people are mad for refrigerated eggs in America!!

LOL. Good American cheese? That's a misnomer if ever I heard one.

If you want really, really good cheese, look no further than France. The Europeans in general do the best cheeses. I've certainly seen nothing here that could equal them.

you wouldnt find it if you dont know where to look. Alot of shit u have to be plugged into hetty cheese circles and get shit smuggled across state lines. As soon as u get the blocks to somewhere like boston or Manhattan it's all cheddar so people mule and horse trade alot. It's like one of those things were it's like oh I have that oh jeez u cant even get it ohhh jeez. U see the same thing with all that kinda shit could be anything.

What does it take to make actual high quality cheese though? I know Europe is known to have the best cheeses but I don't see why American cheeses can't be as good if they follow the same standards used in European. Any mass marketed cheese in the US is obviously going to be lesser quality than something we'd import from Europe, but there are some smaller American farms that have much higher standards than the companies selling commercial cheeses.

Just came from Spain this month.

In their grocery stores they don't have eggs refrigerated.  They are sitting on the shelf with other food products.

From what I've read, the American cleaning process removes the cuticle of the egg which is what then requires them to be kept cold.  Idk how true this is.

I've never really second guessed eating fresh eggs from neighbors chickens here.  Why should they be put in the fridge when they are not in the fridge already?  So I believe that cleaning process to be mostly true :shrug:

It's about knowing people who know people. I can buy cocaine down the street hell I could buy a slave off the internet ffs. You dont thinki we have rare European cheese in America were rich dewd. It's not even that shady to get cheese go in to shops talk cheese and ask a certain type of way if theres anything special in back. Talk to people in the cheese scene join cheese clubs. Alot of people get crazy drunk on snooty shit and eat cheese that tastes like meat rotted in a sweaty cum sock.

IME; a culture that has thousands of years of history of producing it, combined with a broad consumer demand for it. Last I checked neither of those things exist here.

Don't get me wrong, America does some shit fucking amazingly and at world-class level - but cheese aint one of em.

best cheese i've ever had was during an expensive wine tasting hour on a Royal Caribbean cruise ship.

Most the staff is from different countries and the dude educating us on it all was French I believe.

Had some pretty good cheese in Spain too.

Haha yeah it's funny we're even talking about this because last night a friend of mine was telling me about how there's an actual cheese mafia just like there is with real Italian olive oil, because I was mentioning how much I love Parmesan cheese even though I've never had legit Parmesan, going to guess both are under a certain amount of control by the same group of people.

But yeah I didn't think of it like that, I should've assumed it though since it's the same way with sourdough breads in a lot of family businesses.

Seems silly to say the USA has no quality cheese when we consist of so many separate states many of which have strong european roots still.

So unless you've been to basically every state and tried a huge assortment of cheese from all over the continent it seems hard to really compare. Likewise if you went all over europe you'd probably find plenty of mediocre cheese, and some downright nasty stuff.

In the end flavor is very subjective, there are plenty of fancy cheeses that smell disgusting or have very peculiar tastes and have very limited culinary applications.

America has a lot of cheep cheese but there's also plenty of fancy stuff. We have whole states like Wisconsin famous for their dairy products, and lots of unique/experimental cheeses coming out.

One of the tastiest cheese I've ever tried is a Jamaican Jerk seasoned cheese: https://store.beechershandmadecheese.com/p-286-new-woman-1-lb.aspx

Pretty expensive but has a delicious spicy/savory taste. Not even sure what kind of cheese it is but it tastes amazing, goes great in so many recipes to add some spice :drooling:

What do you feel we do well?

You can get good cheddar here. I've had good mozzarella, but it's probably one of the easier and faster cheeses to make. I've also had decent gouda and such.

I like to go to whole foods and get various little pieces of the expensive cheeses for a few bucks each (the pieces too little to shave on a machine or off a big block that chipped off etc...). Trial and error will find the ones you like!

fresh mozzarella is really an art around here. Is our buffalo mozz anywhere in the country as good as in Itlay. Idk maybe. I've seen some seriously impressive creameries. I know they spend alot of money and effort trying to be.
