Excellent! I just did the early N fertilizer on mine. My local variety (that I've been growing for a few years) is doing great. I think I'll have enough for seed cloves for next years elephant garlic and Spanish red. The overwintered shallots I tried - meh. Maybe maybe not.

That is really interesting falcon. I just assumed the bulbils were the seeds. I think I want to try that just to see, I’m sure it’s not so easy but nothing to lose.
I forgot to post my garlic bed lol it’s behind the snowbank under about 3’ of snow.

I actually think it’s going to be a great year as long as we don’t get too much spring rains. So much snow on the ground, the frost really hasn’t went very deep.

I'm thinking I may try this too, I didn't put any garlic in this year, but I'll start some soon just to see if I can get some seeds.
Your garlic is probably growing slowly under the snow.

No doubt! I’ve seen them come up a few inches then we’ll get a late spring snow storm where they’ll get covered and they do fine. The greenery coming up does great, no damage.

Garlic does indeed remind me of vampires. Why must it damage vampires? I don’t need it anymore. I always say, without garlic, these days. My grandma used to cook with garlic a lot. It’s in a lot of the lore of my vampire stories that I read.

BLACK GARLIC
get a rice cooker, one that will idle on "warm" for around three weeks without going off, fill with clean garlic bulbs, maybe put something in the bottom of the cooker to keep air flowing, close lid tightly and set cooker to warm, DO NOT COOK GARLIC, at about two weeks check for doneness, cloves will begin to turn brown and then jet black, it usually takes three weeks for me in my cooker with the type of garlic i use, the smell will tell you when it is good, longer will tend to start drying it out and the cloves become chewy, like a gummy bear, my wife eats them like candy, they are mild and sweet, the garlic flavor is greatly diminished but still very present
i store black garlic in the pantry in a paper bag, seems to last forever but really we eat two pounds pretty fast(how much my cooker holds)
black garlic is an asian thing, Korean i believe, and is a product of the Maillard process, supposedly far better for health with elevated antioxidant content, the flavor is amazing, black garlic oil on ramen is GOD, the soft stage cloves are mushy(about two weeks) and can be spread like butter on toast, added to marinara sauce the flavor integrates completely and becomes that secret ingredient that sets it off, combine with fresh garlic for maximum results

Great info killingravensun, I had no idea that’s how black garlic was made. I haven’t gotten into cooking with it but want to try it. Heard it is very strong.
Thanks!

it is actually milder, the "bite" is greatly reduced while sugars are elevated, when mixed into complex dishes it hides well, you can tell there is something there but its hard to identify, i think it may be a secret ingredient in "bbq sauce" flavors(judging from the smell), the ingredients list would just say "garlic" without telling you what kind, there are large expensive commercial garlic cookers available for this so a lot must be getting used somewhere

Interesting, I definitely want to try it now. So what temperature is the rice cooker on warm then? Would a crock pot on warm be the same?
I have some garlic from last year but guessing I should probably wait for fresher stuff...
