PC trouble, need advice

Hi all!

I have gass stove, and after 45 mins PCing rye jars, i run out of gass.. now i can't order new gass bottle and finish pcing today.. but i can do it tomorrow is it ok to leave jars in pc till tomorrow? Or should i make new rye? Also should i go full cycle or 30 mins less?

It's totally ok to leave the jars in the PC for several days. Don't open the PC!

I would PC them for another 30 minutes, but not more. Otherwise you risk to dry out the substrate too much.

Definitely going to have to PC again for appropriate time.  I would not think you would have to restart with new rye though, but I work with oats.  Maybe someone will chime in that has experience with rye.

in that case it's only 1h of PC maybe a bit more.. i don't like that idea.. my PC can't reach 15psi so i go for 2-2.5h of PC.. after that my moisture content is great.</font>

usually i go for 2.5h so i was thinking to go 2 hours additional tomorrow

anyone with real experience on this? will my moisture content suffer to much if i go for a full cycle tomorrow?

rye had 22h soaking time and 10min boil

You don't dry things out pressure cooking. They're bathed in steam.

So what bad things may happen from opening the PC? I'm curious because it doesn't seem risky at all since OP is going to run a full cycle anyway.

I wouldn't suggest leaving jars in the PC. The filters stay wet and when it cools down it sucks in contamination laden room air. Take them out hot let the filters dry. Never leave jars in a cooker longer than you need to if you can help it.

And do a full cycle. Partial cycle = only partially sterilized.
