King Oysters fruiting question

I have started colonizing grain for King oysters (more CO2 tolerant).  I don't have room for a straw log so it will be spawned to a mix or coir and hydrated straw pellets.  May not be the best option (also will be fruiting in a SGFC) but its all I got room for. (:edit:) My plan is to cut the top of the bag off and case the sub in the bag.  Do I case before or after I cold shock?

Usually it is left to pin in the bag. It pins on the top surface and then the top of the bag is removed. First flush is better to be taken after pins form inside the bag and second flush should be fruited as a block because it pins in the sides inside the bag. If you are not going to use filter bags then I guess as a block...

I've been poking around the search function and see that some say to scratch before casing and others say don't. What is the current consensus?  My thought is to fully colonize the bag and when its time to fruit scratch the top and case. The scratching should help me control (to some extent) the pin set ...no?

I don't know much about scratching. I scratch only when there is a leathery crust on the surface. I have one tip for kings, colonize in high temp, and let them consolidate before cold shock. I personally let sit for 3 weeks after fully colonized, some times even more when I can. You don't have to but I find it better for consistency.
