Congrats on the opportunity!
I have been wanting to start a edible farm in my local state here in the USA. I have been watching a ton of videos from Brian Gallow on youtube, he runs a edible farm in Canada called What The Fungus. You can search for WTF on youtube and he has a plethora of videos.

Hello Thor, Good to see you active. (unlike yours truly)
If you grow any oyster mushrooms, be sure to wear a respirator from day one. Oyster spore allergy is a real and ongoing danger. It takes several months, sometimes years of exposure for your body to develop the allergic reaction, but when it does, you'll be out of business for sure. I can still eat oyster mushrooms, but the spores from their cultivation make me deathly ill. It is the same when I'm hiking and run into an area with thousands of them in the forest. Try running full speed to escape while holding your breath. Not fun. RR

Very exciting for you! I'm tempted to dip a toe in to the commercial side too....
Have you looked into sourcing the substrate yet? Are you planning on using pelleted or 'raw' ingredients?

Looking forward to what you make of it.
I've always wanted to stop in Iceland when I go visit my brother in Germany.

I can't believe I've never heard of Mushroom Workers Lung, or the oyster spore allergy, but I'm just getting into it. THANK YOU for sharing!
My current grow that is about to begin will involve using hydrated hardwood pellets in a non sterilized/non pasteurized manner, to attempt to grow oysters with zero supplements. Just 100% wood.
here's a youtube video of it. Low cost/low tek.
We'll see how that goes! Have you ever tried such a thing?
