Water content

I've read the thoery that shrooms are about 8% dry matter. Has anyone had varying results?

I've heard 10%, but the difference between the two is basically statistically irrelevant. There's always going to be variation so the best you can do is probably just assume a range between 8% and 12%
I'm not an expert on the subject though so I'd like someone to correct me if I'm wrong
