Carne Asada?

I've never had a really good carne asada - hopefully one of you beaners can provide me with a good recipe.

Skirt Steak or Flap Meat is k3y.

Get three pounds of either
1 cup of orange juice (no pulp)
one lemon
one lime
8 cloves garlic
1 large white onion
1 pablano pepper
3 roma tomatoes
1 cup red wine
1/2 bottle tobasco
salt and pepper.
oooh and one small habanero


chop the garlic, pablano, and onion into a bowl and add the orange, lemon and lime juice, salt and pepper.
blend the tomato, wine, tobasco and de-seeded pablano till smooth (deseed the tomatoes for better flavor)

Mix everything in the bowl and pour into a large plastic bag, add the meat and marinate for a minimum of 24 hours and no more than 72 hours.

Cook on the grill.

My fam uses the same thing - oj or sunny delight with seasonings and onions and chiles.

After it is cookes it is sliced into chunks and placed into a big pot with a lid. A little bit of beer is poured over the meat and the lid is placed on top for about 5 min. The beer steams throughout the meat and makes it really moist. There is also a nice juice/gravy after that.
