Pickled Mushrooms with Garlic and Herbs! Preserving Without the Loss of Actives of Drying?

After the weeks of high hopes, effort and nurture, the harvest is finally ready! We have probably already decided how we're going to preserve the surplus produce beyond which we have plans for imminent use. Or maybe we didn't actually consciously decide?

In stark contrast to the myriad of different ways which people use to grow mushroom mycelia and bring them to glorious fruit (or truffle), when it comes to preserving mushrooms, despite the associated loss of actives, drying them seems to be the default position.

Despite being only in the baby stages of my very first grow, my imagination has raced optimistically forward to an as yet unmanifested moment in which I'm wondering what on Earth I'm going to do with the abundance of "my precious" with which I find myself endowed, to keep it in as optimal condition as possible, for as long as possible .... and maybe even somehow upgrade the experience of its ingestion into a more succulently satisfying one along the way!

So, a quick internet search revealed a jar of gourmet truffles preserved in virgin olive oil for sale on Amazon. Has anyone experimented with preserving magic truffles (finely sliced or otherwise) in flavoured/unflavoured oils?

Or how about getting your shrooms in a pickle? I can't help finding the recipe for pickled mushrooms with garlic and herbs below quite inspiring! "Use as many varieties of mushrooms as you can find for the best flavor and texture", it says. Great idea, how about stacking Liberty Caps with Lion's Mane, say? That should blow the Alzheimer's away, even if it doesn't turbo boost your trip! :grin: Does anyone have any favourite recipes they can share that they use to pickle their shrooms?

Quite stealthy too, huh? Who's going to look too closely at that jar of pickles in the fridge? Or how about a mushroom relish? Just don't be donating them as raffle prizes at the summer fete! :eek:

Does anyone have any other "alternative" means of preserving mushrooms, whether gourmet or medicinal?

What do people think about the effect on active ingredients of pickling or preserving in oil vs drying? By avoiding dessication, are we preserving more of the medicinal actives?

I'd love to hear everyone's thoughts on this!

You can always make tea and freeze it as well. Im not sure but I don't think pickling would affect potency any but that's just a guess. Also drying shouldn't affect potency drastically. You can also make blue honey

I've often made tea too, but then I found out that heat degrades some of the actives so that's kind of put me off tea. Sadly a lot of pickling recipes call for cooking the mushrooms, but this recipe is for raw mushrooms so you must be able to pickle them raw.

Heat wont degrade the alkaloids, theyre stable up to around 400 degrees Fahrenheit

Foods packed in oil can be the perfect environment for the growth of Clostridium botulinum bacteria (botulism).
Pickling is much safer.

grow. These mixtures must be refrigerated to slow bacterial growth. A national research study
(which included Oregon households) has shown, however, that home refrigerators are often not
cold enough to safely store hazardous food such as vegetables and herbs in oil for long periods.

Because harmful bacteria can grow faster at higher refrigerator temperatures, the length of
refrigerated storage must be limited for safety. According to conclusions drawn in an analysis of
handling procedures (Nummer et al., 2011), vegetables and herbs in oil mixtures should not be
refrigerated longer than 4 days before using, discarding, or freezing.
