basicly grits are white corn meal or hominy i think it is sometimes called.

chitlins or cracklins i think are the outter layer of skin and fat from a pig that has been cut into smaller pieces and then fried in oil. they are nasty, my grandparents do enjoy them though.

yep we have corn meal but i'm not sure what its used for.
is it mashed corn thats fried like a meat pattie or bubble and squeak?

we have crackling too
its a christmas trad. to have crackling/chitlins when we cook pork/ham legs.
we don't fry in oil though,we bake it in the oven with a criss-cross pattern in the skin
i could never get it right until I learnt that when it's baking you don't baste it
