Yeah i just meant to verify it's shiitake.

You want to transfer while its still growing.  It should speed up and thicken up when you transfer to grain and then again to sawdust

Aloha friends. I'm on Maui and trying to get things rolling. Teaching my friend to pour plates, make transfers, prep grain and substrate... All that stuff. It's going well, but we are working on this steam sterilizer and I have a few questions.

Does anyone know what temps are required and how long sterilizing blocks takes? I've done a ton of grain spawn bags at fifteen PSI and am very familiar with that while deal. But do hardwood and bran blocks require sterilization. I'd assume so.

Any tips on how much time at what temperature would be great. We haven't tested it out enough yet but it seems like our steamer takes quite some time to get up to high temps. The highest I've seen it is 170 but we had to leave. I think it'll get higher. Why wouldn't it? We've got the water in the water water boiling and pumping steam in. Steam is being forced out the doors so, it should continue rising.

But let's say it doesn't. 170 is high as far as pasteurizing goes. Is there an understanding of how long it take at around 170?

I'll take some better photos of it and the farm a little later. It's beautiful here

It's a three door fridge from a restaurant. The doors don't seal perfectly so I doubt any pressure can be achieved

How much supplementation?  Prolly want closer to 200F at the center for 12+ hours.

I'm just teaching him agar and spawn so far. We haven't gotten to making blocks yet. I figured that the bran is what would really need heat because of the nutrition. Eventually I'll be doing some tests to see how much is best. I've never grown shiitake before but if think that a half quart of bird seed (from the master jar) should supply plenty of nutrition. Just because it works so well with actives. The bags we were going to make today would be 20 parts hard wood pellets, two parts wheat bran and some gypsum. I haven't put a lot into figuring out the sub mix yet though.

We got the steamer rigged up and it holds 212 no problem. How long do you think we need to steam 5 pound blocks at that temp?

blocks are 5 cups pellets, 1.4 liters water and 1 and 1/4 cups wheat bran.
