Dude, you're right, oxy absorbers are different than dessicants... I was wrong. In my defense I never buy jerky but make it often.
I used up a couple dehydrators before I ever thought about shrooms. On the bright side I saved all the racks so I never run short of trays.

Mine go directly from the dehydrator to a mason jar and get sealed.

  There's no point to getting them cracker dry if you're just going to leave them out and let them absorb moisture from the surrounding air.

I know, not helpful right now, but for the future!

I have found that a zip lock keeps mine very dry and actualy act as a vapor Barrier/doesn’t allow the dry fungus to absorb moisture from the air. Could just be my climate but it works for me. And as mentioned above, desicant packs

It's your climate.  In the PNW they will suck moist air right through a zip-loc like it wasn't even there.

mason jars, for when you want to be 100%

They are totally fine. In 29 years of foraging actives, I have never gotten sick from mushrooms "going bad" and that was harvesting many lbs a year and just drying them in front of a fan. If they arent moldy or smell bad, there is no issue...
