I can simplify by saying mycelium oxidize materials using various methods (enzymes, reactants), the oxidization causes breakdown.
The breakdown, like with common enzymes, produces solubles and smaller particles to absorb, and then utilize.

Essentially decay and digestion using oxidation, and oxygen where possible.

I experimented with T-Gel (plain, just tea phenols, 0% carbohydrates).

First I found, as I increased the GE (oxygen flow), mycelial growth improved (Tarragon oyster), this is due to oxidation using oxygen.
Tea phenols (like with most other phenolic compounds), breakdown to oxidization (black tea produces more solubles).

I then tested to see if Cubensis could also breakdown phenols as the sole nutrient source, using oxidization.
After 3 passes on T-Gel, and some patience, the Cubensis grew well and produced white-rot.

White-rot is where the mycelium has decayed the phenols and then absorbed them.

       

       

The Cubensis decayed and utilized the phenols.

That's the more simple, and less explored (old) meaning. Lignin is a complex "phenolic" compound. See these images for a more broad list of carbon sources.
Phenolic compounds breakdown into carbon-other, as do carbohydrates. Mycelium can also convert the solubles into glycogen-other.

Both cellulose and lignin (composition varies) are abundant in wood, there are also other phenolic compounds present.
Phenolic compounds are reactive to oxygen, oxidization, and breakdown to oxygen slowly over time.

Mycelium that work differently, for example brown-rot, will leave most of the phenolic's.

I'm talking specifically that Cubensis is not known to decay Lignin. Other phenolics - possibly, but not Lignin itself. When I fed Cubes woodchips once, they didn't decay fully, but turned into a literal "sponge-like material".

Lignin it seems is too 'complex' for the array of enzymes-reactants of Cubensis, its almost 1 stage behind lignicolous mycelium.
It also took 3 sets of T-Gel to get correct growth, so instantly going to wood, probably won't ever work well.

Turning spongy means it decayed a portion of the low nutrient wood (probably cellulose).
My point is, even Cubensis needs oxygen to perform oxidization.

Note:

Not all lignicolous mycelium will do well on all wood types, there's a list of wood types that don't work well.
This will be due to the composition and materials present, including their pH influence.

Enzymes and reactants can destabilize, not function, under a certain pH.





Cubensis from reading and experience, prefers a pH of 6.5-8.?

Kuehneromyces mutabilis on alder sawdust supplemented with ca. 25% wheat bran, fruited at 10-15 °C.

The caps fried in oil with a dash of salt tasted great with pasta. A quite neutral mushroomy taste.

Here's what I've been working on, Hericium erinaceus fruiting out of 1L wide mouth mason jars. The interesting thing about these are they are from the exact same clone/culture/agar plate but almost look like entirely different species. I think this is caused by either a bacterial infection, laggard culture or strain/phenotype expression, but I definitely and unfortunately have a bacterial infection in some of the jars.
