Grain jars drying out during incubation....

First batch of jars, new grower here....
I am incubating some quart rye grain jars. Myc is coming in slowly (I was shaking too soon...). But I've noticed that the grains are starting to dry out. I'm using a seedling gemination mat underneath a mini tub.
Pic is not the best, but at the bottom of the jar, you can see the different color of grain -- they seem to be drying out.
I tried to add some water to the bottom of the tub to increase the general humidity in the tub, hoping that the gas exchange filters on the jar lids would allow some water into the jars to balance out any evaporation.
Thoughts?

That looks really weird. Especially since if it's drying out, the top grains would show it more than the bottom ones.

Bacterial as fuck. It's not dried out.
Quit with the incubator and water and shit. Stick jars on a shelf. Wait. Maybe shake at 30-40%. That's it.

They look burnt on the bottom. Next time just set them on a shelf to colonize...

Are you recommending no heat?
It' winter here and the room I have the jars in is about 65 degrees during the day. It's denver, so the temps are always fluctuating in the winter... Some days it's snowing and icy, the next day it's 58 degrees and sunny.
How about darkness? I'm currently covering the incubator tub with a black sheet, keeping it completely dark.

I am curious if that burned look comes from my pressure cooker methods...
I have an all American 21.5 quart.
Could they be burned on the bottom due to heat from the burner underneath the pressure cooker?
I'm adding three quarts of water, with 7 quart jars sitting in the water. (Three more horizontal on top of those).
Maybe, when I am bringing the water up to a boil, it's burning the bottom layer of gains in each jar... idk

Do they look like that straight out of the PC? Do you use a trivet on the bottom of the PC?
