Gypsum not dissolving even after boiling *Pictures*

Here’s the gypsum I have. I was making some oats and threw a little in while boiling. It left “sand” in the bottom of my pot even after heavy boiling for half an hour. It’s not dissolving at all really. I’ve also noticed it’s all clumped up and not loose in the bag like it’s been sitting around for forever and collected some moisture. Here’s what it looks like.

I don't know a lot about gypsum but I bought some on Amazon and it is pure white

Does this stuff look right to you? Looks weird to me. As mentioned above doesn’t have the same color or texture of other gypsum I’ve seen.

Nearly insoluble

Calcium sulfate solubility in water at 20C

Also it dissolves better in cold water than hot water. Which is the opposite of what anyone thinks based on their knowledge of how sugar and salt dissolve.

enthalpy of solution for gypsum is negative aka exothermic and there's energy release when you try to dissolve it. So cooler water speeds this process up.

Dissolving sugar is endothermic and absorbs heat rather than gives off heat. So using hot water speeds up the process.

Lye, drain cleaner, or sodium hydroxide also dissolves better in cold water. Trying to dissolve a hydroxide in hot water can lead to it boiling in some cases.

Well damn that does contradict my humble assumption of hot water speeding the process. I knew something wasn’t right because like I said it was all still in the bottom of the pot and just looked like sand. I assumed impurities like rock particulate matter.

Rock other than gypsum, because I had thought gypsum would dissolve.

Maybe you just threw too much gypsum and oversaturated the solution, thats why it didnt disolve.
