Were the cakes fully colonized when they started pinning inside the jar? I can’t see the bottoms obviously lol. But if they were then you’re good to go the cakes look fine. Flush size won’t be as large since they weren’t dunked just make sure you dunk them after the flush. I just mist the walls I dont mist the cakes directly

Discoloring I would say. Post pics if you notice any abnormal coloring on your cakes even if you think it’s bruising just Incase. Blue bruising is okay and will most likely happen the more you handle your cakes. And if you get your smell back anytime soon smell is a good indicator that your cakes are contaminated. You’re cakes should only have a fresh earthy smell to them.

The cakes look healthy to me.
The biggest thing to look for is Trichoderma. It's an EXTREMELY aggressive mold that starts out white, very similar looking to cubensis mycelium. Once it speculates it turns emerald green. At any point you see this mold on your cakes or substrate you need to toss immediately as the spores will scatter and contaminate future grows unless you clean the sh*t out of everything.
What exactly are you worried about?
In the meantime I can tell you this..
You're shrooms are reaching for fresh air. That is why they are so long and skinny, like noodles. Without proper FAE (Fresh Air Exchange) you are not going to see optimal results.
You said you spent a lot of time on these cakes and didn't want to ruin them, however, you didn't look up a how to build a proper FC. For BRF cakes an SGFC (Shot Gun Fruiting Chamber) is the best way to go. You can search for a tek (directions) on how to build one in this forum. Be sure to follow it to the "T". Every measurement and hole is designed to exact specification. You'll just need a drill, a clear plastic tub with a lid, and some perlite. The cost is like $15 altogether and you already have the tub. So less than that even. (You can NOT sub the perlite for vermiculite!)
You can make an SGFC and move your cakes into it at any time. If you don't.. well I guess just try to fan a whole bunch since that tub allows for zero FAE.
But anyways.. the cake looks pretty good. It's your conditions that do not.

Humidity chamber works fine for me only reason I say keep an eye on em is because sometimes premature pinning is caused by contam

Yes your cakes should smell like that. Any other smells I would consider contam but having only a few grows under my belt myself I haven’t really had to deal with contams....yet. common molds from what I’ve researched have a sweet smell while others may smell like dirty socks. I leave my lid slightly ajar and mist when needed. So far so good

Do you have holes on that tub? I wanna say they need more fresh air but there is so little colonized sub in that container it shouldn't be an issue.
