Ran the Presto dry on my first jar run

A bit of a shit afternoon.
Ran 7 quart jars of rye in my new Presto and somehow managed to run it dry at around 75mins
I had 3 litres of water in there for the 7 jars.
The gauge was pretty much on 15 the whole time but I did notice the valve labelled "TOP" was venting a lot. The weight was just jiggling away.
So now I don't know if this would have dried out my jars and whether I should proceed to inoculation? I figure they had enough time under pressure but aren't sure if I have dried them out as a result of letting the PC run dry?
I'm also trying to work out how it ran dry if I kept it on 15psi as much as possible for the duration? What do I do differently next time?

Turn the heat down to where it holds 15 but doesn't blow off so much steam. Add more water to start.
One or both of those should fix it.
If innoculant and jars aren't too scarce you may as well noc them up and see what happens. Too dry is better than too wet.
Noc them up and then make another batch and noc them up too. And again for good measure.

A tip I saw amd use that is sort of against the presto guidelines but works well is to tape a couple quarters to the weight for pressure cooker. This will allow you to hold 15 psi without the weight jiggling and letting off a bunch of steam. Keep in mind you're reducing the safety factor since the weight won't let off pressure until like 18 psi or so at that point.
Also you said there was a lot of steam from the pop up valve. I would look at that carefully and make sure it's clean. Mine barely has anything come out of it once it pops up. So little that I haven't actually noticed any steam come out of it while it's at pressure.

Yes tape 3 quarts to the toggle! Not only will this make it lose almost no water but it will also make it run quite. I used electrical tape to tape mine on but in sure ducktap would work fine too. The toggle will not start to giggle until it hits 18 psi. I can run bags for 3+ hrs and still have plenty of water left over. Good luck!

The pressure held by the weight is a function of the mass vs the pressure effected surface area. So "3 quarters" won't change the pressure the same amount for all cookers.
Work yourself up gradually, but yes, if you add a bit of weight you should be able to hold 15psi before the rocker stats rocking losing water, but you will still need to tun the heat down to the correct point to maintain 15psi without going much over or losing pressure.

Wow you guys are braver than me fucking with the essential safety feature of PC. I would be absolutely terrified of sticking anything anywhere near my PC weight because like Rhizenburg just mentioned it will have a different effect on every cooker. Pushing it past what its designed to do is asking for trouble. My PC is designed to do 15psi so I just let it run. In my PC manual it says add 100ml per 10 minutes of desired cook time, once you have vented and built up pressure you just turn it down so that it's just before the level where the weight goes off. 1.2L of water is enough in my cooker for 2 hours at 15psi and there is always water left at the end.

This is how I do it.
Ok put hot water in the pc. As hot as your tap will go.
Electric stove top turn on 2 burners at same time. One big on high one small on 6. Put the pc on big eye on until full pressure. Then move to the small eye.
Steam will be rolling out. Give a minute or two then back it to 5 1/2. Then give it five minutes. If steam is still rolling out back it down to 5 give it five minutes and so forth. The goal is just enough heat to keep pressure. With this method I can usually get the small eye down to 4 1/2 with little noticeable water lose.

Forget adding quarts to the weight for now, the main problem is that the TOP valve was not working properly, you lost all your water there, when it is up it should be completely sealed and no steam should vent from it. Next time clean it properly and when you bring the cooker up to pressure make sure the TOP valve is sealed properly, if it vents from there try turning it a bit and it should seal.

I have the 23q presto also and while I do have some weights added to the rocker, your real problem is that pop up valve not sealing completely.

Pcs have safety release valves. Pcs are tested far past 25 PSI. Putting a few quarters aint shit.

Yea the safety valve, good point I forgot about that.
Any source for testing up to 25psi? How do you know a few quarters on the weight doesn't take it higher than that? I guess it doesn't matter with the safety valve but I'm just not keen on messing around with massive amounts of pressure. It surely makes more sense to get a PC that is rated to the desired psi.
