Rye was inoculated with agar wedges, I didn't use LI due to added moisture concerns...

Yes, hot shake is required with out a doubt but they dont need to cool in the pc after the hot shake tho like i previously thought. I have done a test with oats but ended up with a few busted grains, don't have a good writeup for em yet.

I have never put jars back in the pc to cool after removing to shake. I'll post some pics here soon to show how my dry rye jars colonized.

Everybody says to boil grains, but honestly they don't need it, and a simmer means slower hydration which means you don't have to watch it as closely.


Works fine for us in bags. We sterilize at just under 5spi all night and inoculate with lots of thick slurry. No shake, bags are ready in 5 days.

The lids need to be modified for gas exchange though, correct?

I'm still a noob, so just wondering what you do for that?

Some of the pictures leave out the top of the jar.

Plastic lids do not need modification
