Help with birthed shiitake

So I birthed this shiitake on sawdust into a greenhouse I just built. I’m using this as a greenhouse test run. It’s been in there about a week, in high huditu and maintaining a surface temp of 72ish degrees Fahrenheit. I turned off the heat yesterday and let the room temp drop to 40 F to give it a cold shock. How’s it looking? And any suggestions getting it to pin?

Shiitake take around 2 months to colonize sawdust. In that time they turn almost solid brown. After that you fruit them, mine usually take 7-10 days to fruit  I'm not sure what you have there

My spawn jars were tinting brown. Ok, so I probably opened it up too soon?

Yeah should have metabolites form (brownish red water) and shrink a good deal.
