How to get pressure cooker up to 15 psi?

I had the burner on HI and it would not go over 14.5 psi. I don't get it.

You didn't provide enough information, such as type of PC, heating apparatus, etc. FWIW, 14.5 and 15 PSI are only like 3 degrees apart, so 14.5 PSI should work fine. And if you're using an AA, the weight is accurate, so go by the rattling and not the gauge (which is just for a guide and isn't always calibrated correctly).

It’s the Presto 01781 23 quart canner and it was an electric stove with the spiral burners.
Ok so even though the gauge goes up to 25 psi, you are only ever gonna get to 14.5-15 psi with a stove?

If you hit 25 psi your cooker would explode. It would blow the safety gasket out at minimum

Yes because you have a weight on the top that jiggles to let air out once it hits 15psi. It's best to turn it down once it starts jiggling so you don't run your pressure cooker dry.

I have the size down presto from yours. 16 quart I believe. I crank it on high until it’s blowing steam, run it without the weight for ten mins to pressurize. Then I drop the weight and cut my stove all the way back to about the middle setting and it is enough to keep it rocking. As said before you don’t want to run it dry. It will warp the shit out of it. Always run it on the lowest setting you can get away with, and still keep the rocker rocking.

You're only going to hit the PSI that your weight is set on. So when it's rattling tons on a 15 setting, it's at 15. It sits at 14.5 because every time it rattles or spins, it's releasing pressure. When it's approaching 15, turn the heat way down so it just maintains the pressure without venting steam/pressure.

OP, tape coins to your weight as per mushroomnate's link to bod's tek. I prefer unscrewing the plastic part of the wight, cutting back the tabs inside it, putting on a few large washers, then screwing the plastic part back on. Fine tuning is done with thick solder.

+1 for the above. Do not modify your pressure cooker.
My PC only goes to 13 PSI. I cook everything (grains, BRF, Agar) at 13psi (grains for 100 minutes) and have never had a problem.
14.5psi is fine. If you are paranoid, add ten minutes to your timings.

PCs are tested to be able to withstand 100+ psi. The difference between 13 and 15 is negligible. Besides, the safety plug always is the first to go, and that doesn't pop until 20ish psi. Adding a few coins to a weight won't suddenly break it.

Right, but people can put the coins on unevenly and run the shit dry without realizing it. People should understand basics of their PC before modification. OP doesn't know how to lower the heat yet lol HE'S JUST A CHILD, MAD

Yeah Idk maybe I overestimate people thinking that if the weight is off balance they'll just move it around til it's fixed. Gotta remember not everyone is used to fixing shit.

the difference in temp between 14 and 15 psi wont be that much anyways. just cook your stuff for 10 minutes longer if you are worried
