Yeah, I gotta get over the agar.

This is disheartening, but good in that it's important to my growth. So thanks, everyone.

I'll probably (1) wait a couple days to see if any jars turn, (2) choose the most vigorous, solid white ones, and (3) carefully spawn to coir to see what comes. I've already had a couple monotubs go to Trich, so it's not like that would introduce new contaminants to the house.

You can get away with spawning bacteria to get something, you wouldn't be the first person. Just smell them make sure there not to sour and try to use the highest spawn ratio you can (less coir to seed). That will give you the best chance.

If you do get lucky and get fruits I'd clone them to agar and once you have a clean culture look up some LI teks like pasteys ezlc. There much easier to see contamination.

If it colonizes 100% without funny colors or smells spawn it to it's own shoebox. If it goes bad toss it then.

Yes: Temperature, duration, whether there's a dry time added to the cycle . . . There are presets for media, instruments, etc., and the parameters are also customizable.
