Shoebox harvest, help please

So I've run into a wall. My tubs for the most part have fruits big and small, all with broken veils. All while still having many late bloomers trailing behind.
At first I figured just grab the big guys, but upon further inspection I noticed all the broken veils. I decided maybe the best bet is to just chop em all and go for the second flush.
So, I harvested one. I would like to hear a few opinions on what I should do with the other tub, it has so many small guys on it with veils intact...

I did grab 2 of the biggest, best looking fruits and put em on plates for clones, I'm hoping this ensures bigger fruits from the cultures?

I harvest my oysters as they mature so Id imagine you would have best results doing the same.

I see it's always talk of 1st flush, 2nd flush, etc....why isn't it just a continuous flush picking mature ones as they mature? I'm new obviously and am working on my first grow. A continuous process just seems like how it should go. Or is it because if conditions are proper they all grow at relatively the same rate giving you full flushes versus fruits at various stages? And yeah I'd like to know too what you do if you dont get an optimal flushed but rather fruits at all stages...

The thing with multiple flushes is, you are either dunking a cake or rehydrating a sub? That's what feeds the next flush of fruits. This is my understanding.
If you were to just leave the cake/sub in "fruiting conditions" pulling shrooms as they mature. Only misting it along the way, I dont think you would be able to get multiple flushes that way?
I'm not sure about oysters, I would like to know if the grow parameters are the same as with cubes?
