Im preparing to buy a dehydrator. Every one I find has 70 celsius-160 farenheit max temperature. Is that enough?

Yes and it dries mushrooms a lot faster at that heat.

I run mine at 160 and I rarely have to run it longer than 6-8 hours. If they are really small mushrooms it is about 4 hours. You won't burn the mushrooms unless it is really close to the heating element.

Mine has three settings. The middle one has about 70-75°C (measured) and gets something like this easily cracker dry in 18-24 hours:

It has a 12h timer. Once it reaches 12 hours, move the trays around. Upper to the bottom, upper-middle to lower middle, run another 12 hours and be done with it.
Works even with monster shrooms like this:

I think that turned to something like 350-400g dry. The trays are all filled about the same, the lower ones just a bit compressed. That CRS clone caught me off guard first flush yield wise. Like 250g dry from a single 41 liter tub filled with 14 bottles.

For my first harvest ever i put fruits in dehydrator at 160F for 8 hours.. they were cracker dry, but after 2 weeks in glass jar with desiccant they started to bend again.. so now i run all big or small fruits for 24h at 160F.. today i tested some shrooms i dried 3+ weeks ago (also inside glass jar with silica-gel on bottom) they are great!.. i would say don't go under 12h even for small fruits..
after proper drying you need proper storing.. put dry shrooms in brown bag or ziplock bag and put bag inside glass jar with good seal and desiccant on bottom (works great for me).. for larger amounts use vacuum sealer.
