Question about cakes drying and pinning?

Have some cakes I decided to fruit inside buckets but one of my buckets didn't have a lid so I just put a plate over it. The cakes in the normal bucket are doing better than the cakes in the one with the plate. I think too much moisture might be escaping. Will they still be able to pin you think?

Any Pics sounds interesting? Sounds like the plate is either letting too much out, or not letting enough air in

Maybe the first. I can see it has some knots. My other tub has a normal lid and is pinning like mad. (Sealed lid) I figured if I just let it go and mist that it would fruit. The cakes aren't dead; they're just shrinking. Feels alive at the surface of cakes. They're just shrinking from evaporation which is kind of worrying.
