pressure cooker or canner?

alf is getting started on his 3rd grow and he is movin on up from steaming to a bonafide pc. what are the differences between pressure cookers and pressure canners, and which should alf purchase? (he is doing a 7-syringe operation with half-pint jars)

i cant afford it. im looking at a 18-quart presto pressure canner at pressure-cookeroutlet.com for $80 (thats including shipping) would it be a wise purchase?

I got a 40qt all american canner, and two mirro 8qt pressure cookers from a resale shop for free. Just because they were dirty. Look at resale shops, thrift shops, and good wills. Also estate sales. You never know what you may find,.

Generally pressure canner means it is larger since you need a big one to be efficient at all in canning. Try if you want but I wouldnt waste my time going to thrift or resale shops if I was you just because I went to about 10 different ones looking and found nothing but the tiny 4 quart models.
Look on ebay for a used all american or maybe a new 23 quart presto since it will hold 10 quarts its the one I have.

as long as it has a Pressure Gauge, all the pressure relief pre-cautions. if you can't SEE/READ something telling you you have gotten to 15 psi (and you're still there) you're pretty much s.o.l. (unless you've used a pc many times and you can tell by listening to the pc itself.)
bite the bullet, man. buy the biggest sturdiest one you can afford. the only thing you'll ever need to replace is the rubber gasket ring that fits in the lid.
i had an old 18 QT Presto pc and it had gotten dingy and the seals were bad. i'd say it was about 5 years old at least. i went to WalMart, bought a brand new Presto 23 QT PC ($96 after tax), took it home and unwrapped it. cleaned the shit out of my OLD one, wrapped it up in the bags and shrinkwrap from the new one. then i boxed it up, took it back to the store (as if it were the new one) and told them the one they sold me must've been used and i wanted to exchange it. BAM. free upgrade from WalMart. FUCK YOU SAM WALTON AND WAL-MART CORPORATION.
the PC is the wisest initial investment you can (need to) make if you plan on growing for a long time.

I can fit ten 1/2 pint jars or 5 pint jars in my small 6 quart Mirromatic. Its just the right size for my smaller grows. I'm moving up to bulk, so a 21 quart canner is on my list. The bigger is better, and if you ever decide to get rid of it, they hold their value very well. A great investment.

i can fit like 30 or 31 1/2 pt. jars in my 23 qt. pc. never had a problem cooking that many at once, either. an occasional water-logged jar. just used rough formla of 20 min @ 15 psi for every 20 1/2 pt. jars. makes cooking enormous batches of jars much easier.

Depending on your area PC's arnt that hard to find. I have a presto 23 quart that I picked up at a goodwill for $20. Thing is probably older then I am but is in great shape, and its almost exactly like the new models so any parts are easy to get and replace. I coulda got a presto 23 quart from my mom for free. She never uses hers now, but I didnt know what I would tell her I was gona do with it.
