quick help PSI gauge is broken... their cooking

hey my psi gauge is broken. not familiar with my pressure cooker. any tips for cooking some corn 70 minutes. should i just keep it at a steady steam rate for 70 minutes? help me out their cooking now. thanks =D

Its not leaking steam is it?

For All American cooker, the guage is just a guide, the weight is what keeps the pressure stable...unless you have one of those shittie ones with no weight....

i have national pressure cooker brand. na no steam leaking. i put it on a low flame, then a low-med, now its at medium flame its been in for about 11 minutes.

the gauge doesnt move, the glass is broken that its kept in

If you just have a broken gauge and no rocker, I wouldn't use it. You could follow the pattern of heat you used before, but personally, I would just get a new gauge.

Not quite. The ones with the weight are called "canners", the ones with a shutoff valve are cookers. Cookers are more professional and a valve instead of a weight is more desirable because you're not sucking all sorts of crap in through the weight hole when it cools. I used to have the weight and since a valve from the hardware store was installed, I am seeing much lower contam rates.
