This is what i do...
I boil up some water. Put the amount of WBS i want into a bowl that has a top on it. I pour the boiling water into the boil that has the WBS. Put top on and let soak for 24 hours. For sterilization i microwave for 6 min in 2 min incraments. Then i rinse and strain well. Then i steam the grain for an hour after it has been prepared in the jars. (0 contams so far )
(now this is your choice... you can also simmer the already soaked grain for about 30 min... I never do and everything turnes out fine)

It is hard to get right... different wbs needs different amounts of water. Fill a jar like 1/3 with wbs then add some water so it is just above the wbs line... it will expand till it is like 50-75% full. This tkes some trial and error. If the jars are more than 75% full, there will be trouble shaking them after the pc. PC for 75 minutes. This is a variation of Automan's WBS TEK. Keep making minor adjustments until it works for you. I have used this method with mixed results... but I prefer a soak now. Try soaking and you will see why. No clumps... you can fill the jars more, and there is less chance of contam. The fact is... everybody does WBS a little differently... and most folks will have to throw out a batch or two before they get it right... unless you soak it. Good luck.
