Can you use a little diffuser with water in it inside of a fruiting chamber to keep up humidity?

If your sub is prepared properly, your humidity should be fine. Proper misting will do the trick. If you are doing cakes, and using a proper tek, your humidity should be fine. I don't get the reason for using 'boveda' for anything other than keeping your cigars from drying out -unless I'm missing something?

That's cool.  isn't 84% humidity a little on the low side though?

What does matter is the humidity at the substrate surface.

You can fruit in open air if you wanted, mushrooms grow outside after all , but since it would take so much misting to replicate those sort of conditions we build fruiting chambers.

The fruiting chamber is only there for our convenience.
The trick is to give as much FAE as you can allow without drying things out at a rate higher than you are willing/able to mist. Maximum FAE possible for the minimum maintenance.

In Monotubs, we can find a balance that means we never have to mist. But in a mono the substrate is usually large enough to provide its own humidity.

Cakes are much smaller. The SGFC is probably the best designed FC for holding multiple cakes, RR found the balance between Max FAE and Minimum misting

You want the opposite of a humidifier in the fruiting chamber. You want the moisture from your substrate to evaporate, you don't want to block that. You want fresh air going in not humidity. You can get fresh air from some holes, 100% automatically + passive not automated with some crap.
