Grain Question

I recently pc'd some wheat grain and had very bad results. Now im going to try the simmering method to attain proper moisture content. Will the simmering method make the grain prone to burst while being pc'd? Also I've read that you can add a little verm to help avoid clumping. Has anyone tried this? Results?

What is the consistancy of wheat grain? This is like grass seed? What went so wrong last time? If you simmer too long, the grains will begin to burst. If you PC too long, the grains will begin to burst, but simmering to achieve proper water content should not in itself cause the grain to burst during PC.

The wheat used is called hard red winter wheat berries.... It was purchased from a local health food store, certified 100% organic, with no additives. I do believe that the jars were cooked entirely to long. As well as being to wet. The bottom of the jars were a starchy mess. Very slimy and unshakeable, while the grain on top seemed to have barely even plumped. I also noticed that the slimy mess went hand in hand with the water line. Meaning only where the jars had been submersed did they look like this. Is gypsum highly effective at preventing clumps?

I like rye but I suppose the steps are the same.

1. Soak it for 24 hrs. This will get rid of the starchy mess crap

2. Simmer for 45 min (rye)

3. Let it drain and rinse it off good.

4. Put it into the jar with no added moisture and PC for 1 hr at 15 psi

How high was your water? Whenever I PC, all jars are above water. I'm always surprised how little evaporates even with a steady stream of steam coming out, if that's what you're worried about...

water was about 3 inches up the side of the jars.... the rack that came with the cooker is only about 1/2 an inch tall......

I find that if my jars are too covered by water the result will be more exploded kernels. I keep the water level to about one inch deep.

Not too specific on the problem. Are the jars getting waterlogged? Also, are you using jars with ventilation (tyvec, polyfil) If so, are you using aluminum foil to tightly cover the tops of the jars? More info please.

I've heard of problems with waterlogging before, but once the water level was kept down and foil was tight over the top, the problems went away.

ok, everything is good now... i've figured out my niche as far as whole grains go... The main problem was it was my first time ever touching a pressure cooker, or whole grains. I've got 10 quarts of grain pc'd now, and a few knocked up.... So we'll see... Thanks again everyone for responding..

WBS. Rinse. soak for 14-18 hours. rinse. boil until a couple grains burst. Rinse. Drain for at least 30 min. PC at 15psi for 90 minutes. Shake after pressure escapes while jars are still hot. cool overnight.
