It looks like some of your spawn was contaminated with bacteria. That may very well lead to mold.

I dont think it is advisable to ever keep the grains exposed, I usually mix my colonised grains with about 80% of my substrate, then I put the remaining 20% on top, with a thin layer of dry vermiculite(or wax paper) on top, to keep the contams away.. it usually works great this way

I've left exposed grains on 90% of my grows. Casing is optional. Your grains should be colonized and more resistant to contam. Your substrate should be pasteurized. You should be good unless you have some weak mycelium or strong contam.
I don't see anything bacterial but Kizzle may be seeing something that I didnt.

I was worried about that, but everything looks kind of the same today. If it was bacterial and not bruising, wouldn’t I have seen it spread by now?

When using bhods horse oat tek he also says that he never uses a casing layer for cubes. Maybe I’ll just do it and compare for my third tub and see what happens.

Here’s the same tub in question today. Same area of tub, questionable areas circled. Any chance that that’s bruising?

A lot of the grains are't recolonizing as they should. That's from bacteria. It shouldn't take more than 2 days after spawning for the grains to recover. These are taking longer because the bacteria prevented the mycelium from colonizing the inside of the grain, so they're essentially uncolonized.
It generally is a good idea to sprinkle a little substrate over any exposed grains so they're not as vulnerable to airborne molds. I don't always do it either, mainly because I run out of substrate and it's not a big deal. This is exactly the kind of situation where it may have helped to do so.
