re-sterilizing grain
    #25372165 - 08/07/18 12:38 PM (2 years, 9 months ago)

I've been trying rye recently with a lot of trouble.
I have had a lot of yeast problems with my rye. I'm not entirely sure why, but my rye keeps getting infected with yeast.
So instead of throwing all of it away I took two bags of yeast infected rye and I pressure cooked them again for 90 minutes.
I re-inoculated and one of the bags seems to be doing very well now, the other bag started to colonize again, but then the yeast came back too.

I'm just curious if anyone else has ever just re-pressure cooked and re-inoculated like this after a contamination. If not, why not?

Also if anyone else has had a lot of problems with yeast and rye and you have any ideas please share.

Grain bags you want PC longer than 90 minutes. 120-150 minutes @ 15-18psi.

I never re PC and inoculate any of my grains...if it contaminates I wash out the jars or bags and start over with new grain....just not worth the repetitive risk.

Possible but I would start by PCing for the right time....bags have to go longer than jars due to the bulkier amount.

I've re-cooked grain after some FAILED innoculations which dried out the grain too much and burst it, never ever cooked something that contaminated. dumb idea.

Re sterilization is stupid
Bags need at least 2.5-3 hours at 15psi

So I see people saying it's stupid, but not really giving it a reason why.
It seems to have worked on one of the two bags I tried it on very well, and I only PCed for 90 minutes, apparently not nearly long enough. So it might have worked on both if I had done it longer.

Even if it contams again, you are just back in the same situation, not any worse off.

It is 5 different syringes and I have had at least one yeast and at least one good bag from each syringe. So I don't know what's going on, I'm not getting any other contams except yeast, and I'm not getting it in my BRF, or at least not nearly as much. At least half my rye from two different batches has gotten bad yeast infections.
BTW these were pre-made bags of rye so I did not PC them the first time.

I did give you a reason

It sounds to me like this was kinda doomed before it began...Even purchased pre-made bags I would PC them again.

Another issue with PCing the same grains over and over again is you have to worry about the moisture content and also if you cooking all the nutes out of them...Anyways bud...good luck in the future man.

I guess the way I look at it the grain is already contaminated so if it gets contaminated again it's not a loss, and it's in bags so it's not like its spreading contam to other things.
If 90 minutes in a pressure cooker worked for one of two bags, I feel like that's worth exploring more with longer cook times. Worst case scenario I take bad grain and end up with the same bad grain. Best case scenario I get good grain from bad grain that would have been thrown away. I wouldn't try this with BRF jars, and I wouldn't try it with visible mold. I guess yeast might not be any better, but it seems better because i can't see it i guess.
