ok horse shit is...the shit. You can get dirty stable bedding for free most of the time. Just go to a stable and say it's for your granny's garden or something. After it has been composted and pasturized, it doesn't really smell like shit anymore. Compost is the substrate of choice for commercial growers of dung and soil loving mushrooms, like cubensis, for example. And making mushroom compost from horse dung and straw can be VERY simple.

you can also buy composted horse/cow/worm (castings) at most garden centers, just look for one without fungicide. a common cow compost is Black Kow Composted Manure, it contains a fungicide and they say it gives horrible results.
fee: ive seen equal good and bad grows on both straw and poo.. i think it matters more on the cultivator and the shrooms grown in em..
these are the two most important factors *to me* i like to keep things simple... con of poo: you need to keep it incubating during inoc.. pro of straw: it generates enough heat during inoculation you dont need to incubate.

You compost the poo? What do you mean by that? What about regular compost like fresh from all the leftover vegtable matter?

Yes horse shit is the ultimate medium, you wont believe the monsters that will grow from it if done properly. The hardest part is pasturizing and keeping contams out till it colonizes, but its about that time for some outdoor growing where contamination isnt really an issue.
