First attempt at shiitake, and I have something unexpected.

This is my first attempt a shiitake. On 4/24 I spawned 1 qt oats to 3qts pasteurized hard wood fuel pellets in a shoebox. Not ideal, but I’ve never used bags and don’t have any on hand. Everything looked good, colonization progressed quickly, after 100% the surface started to “popcorn” as a expected. From my research I was expecting a couple of months wait until the surface browned, then cold shock, dunk, and fruit in a GH. Yesterday I noticed the block lifting off the bottom of the shoebox. I flipped it out today and found these.
 
The block has only begun to brown in spots. Should I fruit it anyway? Or should I cut these off and continue the browning process? I think I also have some more pins on this block.
 
How important is it to wait for browning to occur before fruiting?

No dont fruit it yet- wait for it to completely brown- you may have to turn it on its sides when secreating the brown liquid to help it along, those blob fruits are normal for me during consolidation, and I fruits some when they started to fruit, and some after they browned, pulling off blobs when I did, and those I let brown entirely performed much better. PM me your address- ill be picking up another box of bags in the next couple weeks- Unicorn is just a town over for me, ill send you a couple bags.

Thanks for the reply, and offer of bags. I already have a box of bags coming, it just seems like it will be so much easier to use. I’ll pull off the blobs and let them brown completely before fruiting.

Yeah I just had two shiitake blocks start pinning inside the bags, first time that's happened to me it's only week four maaaybe five, I didn't know either so I soaked and stripped them and put them in GH and I regret it.
They have very few pins
Pretty sure I over enriched

Thanks for the help. I let them brown up, cold shocked, dunked, and now I’m getting some fruits!

1.5 pounds from two blocks. The third didn’t pin. I’ll let them set for a day or so before trying for another flush. I’m stoked!

Nice dense fruits, well done. I suggest you let them dry and rest for 20 days before next flush. Depending on strain you may get a great second flush.

I let mine rest after a nice day long soak. Resting for about fifteen days I'm on my fourth flush.

Nice! What type of wood pellets did you use? I have a few options near me.
What's your temperature range?
How are you controlling humidity in the GH?
