I love the stuff. Grows like a freaking weed and it's very prolific. I'm growing two varieties right now (a Spanish red and a white softneck that I've been using from initially buying a bunch at the grocery store. I'm also trying an elephant garlic. If you're not picky the organic stuff at the grocery store works just as well as the seed garlic from the gardening places for like 1/4 the cost.

Pickle it. That's da bomb.

Yeah, here on the left coast US I plant in fall and they pop right up. I haven't noticed any storage issues with the softneck compared with hardneck. Last year's crop starts to get funky right about when this year's crop is ready to be picked.

This is my first try at elephant, supposed to be like a cross between garlic and shallots in flavor and good to roast.

I use mesh bags. I don't have the skill set needed for braiding. I just lay it out on the carport floor for a month or so and when it's completely cured cut off the tops and roots and stick it in a mesh bag which are hung in a cool, dark outside room. It lasts a full year. Well, most of it does anyway.

Do you live someplace where it freezes really hard? What time of year do you plant? Make sure you work a lot of organic matter into the soil so they'll have moisture but no standing water. Sunny's right about them not liking wet feet.

Yum!

Kind of. I keep a year's supply of fresh on hand but for things made with garlic, like pesto, I'll make cubes with everything except the cheese. Thaw them in sautéd veggies, add the cheese and then toss with pasta. Much better than making with dried basil or trying to keep a basil plant alive all winter.

Excellent! I just did the early N fertilizer on mine. My local variety (that I've been growing for a few years) is doing great. I think I'll have enough for seed cloves for next years elephant garlic and Spanish red. The overwintered shallots I tried - meh. Maybe maybe not.

From front to back...



Spanish Red, Elephant, some kinda shallots, white softneck, with a small bed of leeks beyond that. I was worried about the leeks but it seems they're almost impossible to kill.

Most of them. There's one coming off an elephant garlic and the rest are all on shallots. I'll let one of the shallots and the elephant go to seed and see what I get.

Some varieties don't form scapes (the flower tops). Dig 'em up and see what you've got.
