my 23 qt presto cookers manual says to use 3 qts... whick completely submerges the half pint jars... no good at all...

so I get this steel insert to put the jars up on and keep them out of the water, and all goes well for about a month and then bam, all my pressure cookers start bulging out at the bottom... turns out steel and aluminum are a bad combo... found a thread on this board, i think it was anno who explained about how the presence of steel will cause aluminum to corrode faster... turns out that i needed zinc or magnesium, not steel...

so I went to depot and bought a roll of zinc flashing and made three new inserts (to go into the three new pressure cookers i had to buy)

the inserts are 1 1/2" tall, just high enough to keep the bottoms of the jars dry when there's 3 qts of water inside...

we're no longer selling jars.

The easier route would have been to simply use less water.......
You need to use as much water, that by the end of the pressure cooking there is still some water left at the bottom.
If you are unsure, you can test drive the pressure cooker without jars first to see if 1 quart of water will fulfill this requirement or not.
