Some small shiitake blocks (1,3kg each)

Any idea what strain could be?? I cloned it from a supermarket shiitake. I grew it last year too and this strain gives lots of small and medium fruits, skinny stems (could be because FAE??). Inoculated on 18/02, about 2 week to full colonization and rippening until 23/04 (50 days since full colonization, 64 days inoculation-to growing room). As the last year, once strip the bag and take to growing room, harvest in one week. Maybe more rippening/browning could be beneficial
The bags looked like this when I hit and strip the bag to induce fruiting

I havent grown shiitake yet but my first thought about the stems was fae. They still look really nice!
notice in the first picture that the one lone shiitake in the back near the wall is really stretchy? that could indicate fae problems. I got that with my fruiting room when I had the shelves right against the wall without a fan to help cycle air.

I don't know about the strain but I like how they look. Do they always have such a symmetrical darker disk on the cap or is it a difference in cultivation parameters?

Those look great! Next time let the block turn brown entirely, when it starts as creating the liquid, you can reposition the block so all of it browns more quickly.

I modified the greenhouse fae/humidification, now I use a humidibucket with a pc fan and air pump 24/7 and a pond fogger on a timer. Maybe the pc has little power to supply this greenhouse (it's like two 4 tier gh). Also the entire greenhouse is full of substrates. When the kings start to grow I will know if it's a fae problem

I want to know if it's a difference in cultivation parameters too. The only thing I know about that topic is related to donko & flower shiitake forms, that are caused by fluctuations on humidity and humidity & temp, repectively (or something like this I read). With this strain last year, the fruits looked similar.

Like lay them on their side so the liquid falls to the bottom and the white parts sit in it until they turn brown then rotate it to get another side.

I don't think so. The cobwebby lookin shit is the myc. That's what it looked like on the agar. The dark bits are just Sunflower seeds. The thick white bits are fruitung bodies. Or am I way off?

Does the metabolites help with the rippening? or is just for dying the white areas of the block? I never heard that! I'll try!

Yeah I also think the white areas are primordia, because lion's mane starts to fruit just after colonization is complete. In my experience LM mycelium is very thin and wispy. In first photo left bottom corner it seems very wispy mold-like, but if it were mold, I don't see metabolites in the contact zone between myc-mold (but I don't know if LM produces metabolites for fighting like oyster for example). Anyway, if I were you, I would break the grains right now and transfer to final substrate, because you don't want the primordia to grow there if it's not the final container.
