brf cakes from 2 year old syringe

hello friends,
i inoculated a butt load of half pint jars from a few 2-years-old syringes of P.Cubensis mexicana i was keeping in ziplock bags in the fridge. im planning on birthing in a hybrid sgfc. i just have a few questions:
1- should i start the consolidation week countdown when ALL the jars are at 100%? half of them still have a few tiny patches to go and i would rather not have any pins prior to dunking/fruiting.
2- im surprised they colonized at all given the syringe age, but no doubt they are still viable. however, do they strike u as poor performers? im comparing with a few pictures from other posts and i found that most cakes turn super white as opposed to what i have here.

i know ill have to break the jars to get them out but this is the best i could find and it shouldnt be an issue

Those seem like happy, strong cakes there. Your mycelium has got good rhizo growth there.
For consolidation I set the ready ones to one side of my shelf where I keep my jars, and tape the date it completed colonizing then let it sit for a week and fruit. However if the cakes are all pretty close to each other it can't hurt to let some go a few extra days.
(disclaimer) I live in a colder climate so I don't need to worry about pins/fruits till I put'em in the FC. May be diff for ya.

wow your lucky. I guess its because you had them stored in the fridge tho.
I tried using 16 month old spores and nothing happened. But they were just sitting at room temp that whole time.

i could use some guidance. a few cakes already have decent fruits, and one cake in particular has fruits with broken veil. should i leave them and harvest at the same time? or harvest each cake with ready fruits? virtually all the cakes have a good cluster, some are still tiny but there!
what could be the reason for a few cakes pinning faster or earlier? they were all done the same way and put in the same place.
last but not least, how long should i dry them for using a food dehydrator?

Harvest the ones that are ready and let the rest continue to mature. food dehydrator at 130*f till cracker dry.

Dehydrator time will vary depending on size but at 130 it shouldn't take longer than about 6hrs or so. Second dunk for 8-12hrs

Should be okay, just keep an eye on it. if you want to know the temp it runs at, use an oven thermometer while it is running. I don't think it will be higher then 160*f though so you're good.

Honestly if the cakes are really light I would dunk them, but if they still have some weight to them then I would just give them a really good misting and put back in to fruiting conditions. Bottom feeding would be for the cakes that already have nice pin sets on them and haven't matured fully yet. This helps to ensure they don't run out of water during their fruiting. CBK has a good tek on bottom feeding. Here is the link for you, https://www.shroomery.org/forums/showflat.php/Number/23709670
