two issues

After pressure cooking last night, I noticed that the cake was shrunk a little bit, and was off the walls of the jars.  I have low hopes for that set.

I think there were two things wrong:
1. After the pressure cooker came up to pressure, I had to dump the pressure and take a jar out.  Searching the boards - people seem to think dumping pressure mid cook causes this.
2.  Pretty sure my mix was too dry.  Has huge vacuous holes in it, not light and fluffy - lumpy.  doesn't settle down on its own.

So tonight I did four more jars - with more water - I can't tell if I'm at field capacity now or over field capacity.  I suspect over field capacity - fortunately at this point, the only cost to keep on trying is buying more jars (and some time and effort).  :P

So do I have a question here?  I don't know.  Gah.  I probably need to just keep on playing around with it.

Mix it together and squeeze a handful to check for field capacity. When you squeeze it some water should drip out.

If it's a lot more than a few drops it's too wet. If it's under a few drops, might be a little dry.
