Adding gypsum after pasteurisation

So basically I was following Franks monotub tek and when making my coir substrate I didn't add any gypsum before pasteurising it.

Would I be able to just add it afterwards or is it best to just go without?

Spawn to Sub ratio is 1:2 if that helps

Just skip it. There is no evidence proving it helps, nor that it doesn't. It is all based on peoples experiences, and many growers don't use it at all.

What about adding vermiculite to pasteurized cow poo after the fact?  Is that unwise?

Adding gypsum to bulk substrate after pasteurization won't work, because once substrate is hydrated gypsum won't be able to be evenly distributed through out bulk substrate. 

Adding vermiculite to a bulk substrate after pasteurization will ruin hydration level of bulk substrate, so don't do that either.  Mix all materials intended for use as bulk substrate together dry, bring to field capacity, then pasteurize.
