Basement Wine Recipe

Here's a family recipe for DIY wine production I have lying around

You will need:

1 2.5oz package active dry yeast
4 cups sugar
1 can frozen juice concentrate, without sweeteners
3 1⁄2 quarts cold water
1 gallon jug (plastic may be used but glass is ideal)
rubber band
1 punching bag balloon
food-grade tubing
empty containers of your choice.

Combine the yeast, sugar and juice in a gallon jug.

Add the cold water.

Seal the bottle and shake vigorously.

Rinse out the balloon and fit it over the opening of the jug.

Secure the balloon with a rubber band.

Place jug in a cool dark place. Basements are great for this, hence "basement wine"

The balloon will begin to inflate within days. It takes about 4-6 weeks to properly ferment, so the hardest part is all the waiting. When the balloon is deflated, the wine is ready.

When your wine is ready to drink, and you're good and thirsty, feed one end of the tubing into the jug. A second person at this step is ideal. With the tubing slightly above the sediment- it helps to have glass now rather than a milk jug because you can see how far down it's gone- siphon the wine into your bottles/jug (or whatever container). You can drink it then, or do a little extra work and siphon it a second time after the wine has had time to settle and the remaining sediment has collected at the bottom of the container. I like to siphon twice or even three times depending on the wine's cloudiness and the amount of sediment present.

There you have it! Nearly a gallon of DIY wine for only a couple bucks, with completely reusable hardware for the next run. I've had runs where the ABV I ballparked at 18-20% based on it's relative strength (a pint of that particular wine had the same effect as about four beers). Don't expect it to be that high every time; I think that time I used more sugar. After your first successful run, test it and decide whether you want to tinker further or just stick with the tried and true recipe.

I've never had any issue with batches becoming contaminated, but I suppose it's not impossible. Definitely wash everything once before using (forgot to mention that), but ime it's a pretty fool-proof recipe. Basement wine's hard to screw up.

A friend of mine also made some using the same recipe and had no issues with contamination. I know that's anecdotal, but I've never heard of anyone getting sick from it, aside from the expected hangover if you over-indulge :P
