Pressure cooking rye grain jars
    #25078495 - 03/20/18 08:50 PM (3 years, 1 month ago)

Hi,
Washed grain in hot water x2.
Filled water 3" about grains in a large pot: brought to a boil for ten minutes.
Let sit for ten min.
Drained and cool.
About to PC seven, one quart jars of rye grain.
May I ask what is the usually amount of water used for said amount of jars in a 23qt presto?

There is small notches on the side. The one you’re looking for is 1-2” up the side

This isn't correct.:feelswierman:

As long as there isn't too many bursted grains that won't affect anything.

You only want to add just enough water to pressure cooker to not dry out. I add about a quart jar to mine. Same cooker.

But I prop the aluminum disc, for holding the jars off the bottom, up with 3 jar lids. Gives you an extra half inch of water room.

If water is splashing up on the jars during the pressure cooking cycle it will be cooling the bottoms off to 212°f which won't sterilize them properly.

So a an inch or so of water with the PC tray propped up with lids?
That means the jars wont be in contact with water.

Yup, even a little less water that that is fine.

You will want to adjust the temperature so that the pressure cooker sits perfectly at 15 psi without losing excess moisture.

It takes like 25 minutes and some twerking of the heat dials. lol

You don't want the jars to be in contact with the water just the steam.

Foil on top during PC, 15 psi 90-120 min?

Then what? let sit overnight?

No problem

If you're using synthetic filter discs you don't need the foil I don't use foil.

If you're using any other type of filter you're probably going to want the foil.

Anymore I like to do 15 psi at 120 Minutes.

You want to remove the jars after they've cooled off enough to handle and shake the rye up and distribute all the moisture around really well

you'll have to shake them a few times over a day or two to get the moisture properly distributed in my experience

Then knock em up in the SAB:thumbup:

So shake a couple times a day; for a day or two to keep everything balanced?

Next time drain your grains as soon as the boil is done. Don't let them sit in that hot water another 10 minutes. That will cut back on your burst grains.

At what point do you recommend removing the foil? During the shakes or before putting into the SAB?

I remove the foil right before I put it in the sab but if you have other jars to pressure cook it's not going to hurt anything to take it off before hand.

If you take it off long before you're gonna work just remember to give the tops a nice wipe with isopropyl before you put them in the work area.

I wouldnt want it any other way, correct false info everywhere.

Speaking from personal experience every time I cook jars and bags they touch water.

We are talking 100's of jars and 100's of bags. Idk how the water touching the vessel is going to change anything, but please do make sure I don't post lies. Ill definitly be waiting.

You also advise to shake the jars  couple times a day for a few days? Huh? Im confused. When is it advisable to shake a couple times in a day. Maybe thats a tick you have as a grower, with the proper moisture content i assure you you shouldn't be shaking your jars over days to even out moisture. Who has time for that.
