Rye Berries Hydration Methods -[EXPERIMENT]-

This time I´m experimenting with rye berries.


The original water content inside these rye berries was about the same as for my WBS, around 9% water content.

I measured out 100g rye berries from the bag and dried it in the dehydrator for 12h and was left with around 91g dry berries.

All soak tests were done with fresh berries from the bag with their natural water content of around 9%.


Pot was removed from the heat at boiling point and 100g of rye berries were dropped in. This is how the rye berries looked after a 20 min soak in 100-88C.



This is how the rye berries looked after a 40 min soak in 100-80C.



This is after a 60 min soak in 70-60C.



This is after a 90 min soak in 70-60C.



After 12h room temp soak



After 24h room temp soak



After 48h room temp soak



After 24h rom temp soak + 20min hot soak

Awe man I came here hoping to find rye seed as in rye grass seed and you are showing rye berries. You might want to change the title to rye berries.

The hydration level of grains straight from the bag will obviously vary between brands/batches, but still - it's nice that you also tested it, that's how experiments are supposed to be done.

But anyway, very interesting. People on this site should do more experiments.

Thanks for the tip :cheers: I was wondering about that myself. I just translated literally from what the 25kg bag said in my native language :shrug:

What is the difference between rye seed and rye berries? When I google pics I don´t see the difference with my untrained eyes.

The rye seed on the left is grass seed for your yard.

The rye seed on the right is cereal grain.

Violet has a good diffirentiation of rye grass vs rye berries.

Nice experiment brother.

Have done this awhile ago using Brown Duvel distilation technique. Forgot to take a pic of starting weight which is 803g
Takes about 15-20min to verify good stock oats starting moisture @ 14% using oil bath at 190c.


Hope you dont mind brother for my future reference.
Just to add to your data.
20 min soak in 100-88C. 148.29g
((148.29−91)×100)÷148.29
= 38.63% ending moisture content

40 min soak in 100-80C. 170.74g:bow2:
((170.74−91)×100)÷170.74
= 46.70% ending moisture content:heart:

60 min soak in 70-60C. 152.51g
((152.51−91)×100)÷152.51
= 40.33% ending moisture content

90 min soak in 70-60C. 162.64
((162.64−91)×100)÷164.64
= 43.51% ending moisture content

40 min @ 100c soak looks appealing to me. Next is 90min,
I have a feeling/curious that at 46% you can jar em up and load straight to pc without steam straining.
49% is ideal for oats including steam straining which further lessen the moisture.
@46% It has allowance to to suck excess moisture during cycle.

My last oats batch moves loosely in jars @ 49% including stream straining till 47% before pc.

Still observing oyster colonization though.
This are 1 day old.

45% or less is a little bit dry according to your last experiment.

Was thinkering a one step grain prep in regards to this.

Place pot on scale.
Add veg oil 5-6" above grains.
Note total weight(pot, oil, 100g grains)
Cook it on very low settings.
Takes 15-20 till oil reaches 190c
Put the pot in the scale again.
The difference in weight is your B starting moisture content.

Your posted experiment are huge contribution to thr community.
Oh i forgot to add that 1/2 tsp of veg-oil to boil water improves grain appearance. Couple it with a tsp of gypsum to furher reduce starch stickiness & clumping.

Accidentally noticed it during last grain prep. Still observing colonization though.
