Storing potatoes

How do you store your potatoes?
I was thinking about carving into the side of a hill, building a shed, and keeping them in the cool. The reason for the shed in the hill is to keep them cool.

To be able to keep a temperature of 40 - 45 degrees in the wintertime.

Storing them with a few apples help prevent eyes from forming. Something my parents and grandparents taught me but it actually works,

Well, we always store them cool in a room in the basement.
Earth cellars have been used throughout history to store root fruits as potatoes so your idea is probably very good.

That is exactly what I am building.

I even read about people just burying their food in heaps of soil for the winter. Of course, I am going to make a quality root cellar.
I am digging the hole right now. I will then lay a cement floor and use cinder block for the walls.

Thats pretty much what I was talking about. Where I grew up there were river bluffs so people had vertical land on their property. It didnt take much to carve a little 10ft room into the side of the hill and build a couple walls and throw in a door.
