It's good. You can eat them. The mycelium is just growing in an odd place. It's happened before.

All that dark discoloration is spores. Next time pick them right after the veil breaks.

Yea, I like to pick em when the veil breaks as well.. when the cap is still round and just starting to open up.
I would pick em all, dunk your cakes, and reset for next flush
