How to prepare duck

I've cooked my share of chickens, pheasant, and game hens. But not duck.

I like the Chinese style BBQ duck but I'd like to try something different.

Any suggestions?

I suggest brining for 12-24 hours using a plethora of aromatic herbs and REAL maple syrup, then after the brine, rub her down good with more maple syrup and bbq seasonings. Smoke at 220F for about four hours, while generously lathering maple syrup on every thirty minutes or so. I do this every time I cook water fowl and its about as good as good gets.

Brine has started.

Got some oregano, thyme, rosemary, and a little bit of tarragon. Most of it is under the duck.

1 cup kosher salt to 1 Gallon ( not quart) water ratio, 500ml pure Maple syrup.

:thumbup::thumbup: Looking good! If you did 1c salt/qt then i'd stick to a shorter brine i usually go low and slow with 1c salt/gallon, but its also a broad spectrum. Depends on how you prefer, you know, but either way good shit man, take my advice with a grain of salt.:wink:

Crap! I did mean gallon. I dyslexic'd it up there, didn't mean quart. brined for 16 hours.

It really was good.  Hard to tell from the pic but the meat shredded like pulled pork.  Very tender and flavourful.  The skin was also nice and crispy, with a good sweet/smokey/fatty flavour.

gonna turn the leftovers into a fried rice meal, with some chili oil and fried veggies.

That sounds like a great idea, i might have to try that next time. I like  making smoked duck tacos with a sesame hoisin bbq sauce, and hot green apple nappa slaw. If your feeling bold and like making a shiz load of dishes its the only way to fly.

Looks like you know what you are doing. As a side note when I do the same I take all the skin and bones and make a broth. Good for adding flavor and nutrients to rice, noodles, etc... Use it all!

Keeping the fat drippings is always a good idea as well, the stuff works fantastic for pan frying about everything, especially when you brine and smoke. I'd say its as good as bacon fat, and you get a boat load from a hole duck. The fat adds a pleasant smoky umami goodness, highly recommend it.

I'd say.

For decedent foodies, Deep Fried Duck, Crisp to desire or experience. Then like a Sweet Thai Orange Sweet Sour & spicy sauce!

Eeekk, that is good stuff. Yea, the best Duck I ate, had a Thai Taste to it.

Mmmm, that sounds great! Sell that duck, or at least maybe look into selling it in vacuum sealed bags of Smoked Maple Duck (to specialty food stores)!

Duck, maybe Peking Duck, is like a very dark & sweet & juicy bird. Nothing like a chicken when cooked good, much better than chicken, I believe.

Now, I am no expert on cooking duck, I don't recall making that like OP, but I have tried Duck & was almost drooling while eating back when.
