Hard Winter Wheat Prep TEK * 1

I've had several request to do a write up on how I prepare my Hard Wheat, Here it goes!

Supplies Needed:
Hard Winter Wheat
Tap Water
Large Bowl (for soaking)
Large Pot (for simmering)
Strainer (for straining:wink:)
Large Spoon (for stirring and loading jars)
Teaspoon (measuring gypsum)
Tablespoon (measuring gypsum & spent coffee grounds)
Quart Jars
Gypsum (Add 1 tablespoon to soak & simmer water also add 1 teaspoon to jars before PCing)
Spent Coffee Grounds (Add 1 Tablespoon to jars before PCing

Take your large bowl and pour about half way full with wheat


Add 1 tablespoon gypsum, fill with tap water and stir. Remove any floaters.

The wheat needs to soak just like rye would, I soak mine for 16-24 hours (I have soaked for 36 hours with no problems, it was a busy day)


After you have soaked your wheat, It needs to be strained to remove all that nasty soak water.

Load your large pot with the strained wheat, add another tablespoon gypsum, add tap water.

Your wheat needs to SLOW SIMMER for 30-40 minutes, no rolling boils this causes exploded wheat kernels. If you dont know what a slow simmer is I would suggest using google. Its hard to take a picture of what a slow simmer looks like but here is the best one I could take

Your wheat should look something like this when it is completely full of water

You need to strain again I usually go for about 30-45 minutes to allow all the simmer water to seep out of the wheat.

Load your quart jars, I add 1 teaspoon gypsum and 1 tablespoon to my wheat jars before PCing

Shake up the coffee and gypsum

And then PC for 90 minutes @ 15psi

I've had good luck using wheat and its easier for me to find locally. Here is a couple wheat jars fully colonized.

HWW is what my dog's cat uses.  Nice air spaces, not too wet or dry, esp when drained for 20-45 minutes.  plus its like $0.99 - 1.19/lb

i like to add hard wheat to my wbs, but only if i've
been to the country to buy it. WAY too much at

I can pick up 50lbs or Hard Red Winter Wheat for $22.00 but cant find rye locally unless I want to pay Whole Food price and thats outrageous.

Bumping this because in the past I've always worked with rye berries but for some reason they're no where to be found anymore where I live.  I found hard winter wheat and followed this tek but had major issues with very slow colonization times and wide spread contamination.  Can anyone give insight as to the validity of this grain tek?  I'm suspecting the coffee could be an issue as well as the possiblity of over hydrating the grain.  Any feedback would be huuuuuge for me.

Thanks a lot for this.  I noticed this prep tek requires absolutely no soaking!  That may literally be the first time I've ever heard to not soak the grain and go straight to a boil.  Sounds dicey but his grain looks good.  Interesting.

Quick question. I tried this tek and looks like I left them a bit too long on the hot water after boiling because I couldn’t find my strainer on time. Everything burst. Made it again and still running to more burst grains that I wanted. Bedroom most of the looked hydrated a lot of them were bursting. After I simmer, how essential is it to remove all burst grains? What if I still have some burst grains in jars when sterilizing?
